Salted Brown Butter Rice Krispy Treats

Salted Brown Butter Rice Krispy Treats
 
8x8 square pan
1 stick butter
1 16 oz bag mini marshmallows (see marshmallow conversions below if you don’t have minis), divided into 6 cups and 2 cups of marshmallows
1/4 teaspoon vanilla
1/2 teaspoon salt (coarse or kosher salt if you have it, but regular is fine, too!)
6 cups Rice Krispies (1/2 a regular size box)
 
9x13 rectangular pan
10 tablespoons butter (1 stick plus 2 tablespoons)
20 cups (I know!) mini marshmallows, divided into 16 cups and 4 cups (This will take two 16 oz bags PLUS another 3 cups from a 3rd bag…it sounds excessive, and it is. But also worth it.)
1 teaspoon salt (kosher or coarse if you have it )
1/2 teaspoon vanilla
12 cups Rice Krispies (one regular size box)

1. Lightly spray baking pan with cooking spray.
2. Brown butter: in large pot (if you are making the 9x13 recipe, use the a very large pot!), melt butter over medium to low heat, stirring occasionally to make sure the butter isn’t burning in one spot. It will pop and hiss as the water in the butter evaporates. (Don’t walk away while butter is browning - it can do from golden brown to burnt very quickly!) When butter goes ninja silent, it is finished browning - turn off heat and stir/scrape up any brown bits stuck to the bottom of your pot.
3. Add marshmallows - for smaller recipe, add 6 cups; for larger, add 16 cups. Stir vigorously to melt marshmallows all the way. You can turn heat back on very low if needed to completely melt marshmallows.
4. Stir salt and vanilla into melted marshmallows. Turn heat off if you turned it back on.
5. Make sure you are close to your baking pan!
6. Add Rice Krispies to marshmallow mixture and mix well. This can get VERY sticky and make your arm tired! Tag team with someone to keep mixing until Rice Krispies are mixed in well.
7. Add remaining marshmallows (2 cups for smaller recipe and 4 cups for larger) and mix in well.
8. Dump it all into your baking pan! If you have a buddy nearby, one person can hold the pot (with potholders or towels!), and the other one can scrape the mixture into the prepared pan. Spray your hands lightly with cooking spray and press everything evenly into your baking pan. Be careful - the mixture will still be warm!
9. Let cool for 30 minutes, if you can wait that long! Flip pan upside down onto cutting board and cut in squares. Enjoy!

1. 1 large/regular marshmallow = 14 mini marshmallows
2. 8 regular marshmallows = 1 cup
3. 1 jumbo marshmallow = 1/2 cup mini marshmallows
4. 1 jumbo marshmallow = 4 regular marshmallows
By bag:
1. 10 ounce bag mini marshmallow = 6 cups
2. 10 ounce bag mini marshmallows = 40 regular marshmallows
3. 16 ounce bag mini marshmallows = 8 1/2 cups
4. 16 ounce bag regular marshmallows = 63 marshmallows
